Why eat large animals when they are in plague proportions but not farm smaller rarer animals too?

It's a good question, especially since from a Darwinian perspective, the best thing that can happen to a species is for us to find them tasty. Look at cows: are they anywhere near being extinct? Nope. BC we like them so much we make sure that there's always more of them. I think you're onto something there.
